I'd like it if we could just delete them from our profile after they've ran away totally not because mine did and I'm ashamed or anything.

I agree with Maia. Knowing every user who fits into the requirements you listed would be impossible, no matter how small a site is.

Unfortunately, the VIP is already the way it is to help fund the site, and this could make less people buy VIP if they just wish to wait until their birthday to edit their PT/BS. 

Exactly what FLD said! The VIP for each character helps the sites stay running and helps pay for fundraising!

One I can think of would be how frequently the Quidditch team changes. Who would have the power to give the symbol? Likely the Head of House, and if they're awfully busy, it'll be difficult to constantly regulate who has them and who doesn't.

This could also just be something you could add to your Profile Text if you wish to share what country you live in?

If they wished to show their age, they can always just add it into their profile text.

If you have an issue with your character dating someone much older/younger IRL, you can always ask for their IRL age before beginning the ship. If they do not wish to tell you, you are not obliged to ship with them.
Keep in mind that just as they may lie to you about their age when you ask them, they may also lie about it when creating their account. 

This takes away from the ability to create their own home and hinders where they can live. At the current moment, graduates can live just about anywhere they wish (within realism and reason). One of my own graduates lives in Japan.
If we could only rent/buy the homes available, I highly doubt any of them would make sense to fit in with Japanese culture. 

Without this feature, they may have houses based on their own preferences and the area they live in.
